
Recipe for 4 servings
• 3 cups fresh corn flour
• 3 ripe plantains
• 1 big onion
• 4 large peppers
• Small piece of ginger
• Palm oil or vegetable oil for frying
• Water
• A pinch of salt
Method
Beat and pound the plantains until they are smooth and free from lumps. Grind the onion, ginger and pepper together and mix the ground ingredients with the pounded plantain. Make the corn flour into dough and add to the mixture; mix well with water and add the salt to taste. Mix very well and fry spoonfuls in hot oil until both sides and the inside are well cooked. Serve hot.
