Snail salad

Snail_salad

(For three servings)

Recipes

• 10 apple snails

• 4 cups of water

• 3 tablespoons of fresh limejuice

• 1 tablespoon of sugar

• 1 tablespoon of fish sauce

• Salt and seasoning to taste

• 1 onion (sliced)

• 1 large banana blossom,

(Sliced thin, soaked in water and drained)

• 1 cup of chopped fresh herbs; mint, sweet basil and cilantro

• 2 hot chili pepper,

• Chopped (optional)

 

Preparation

In a small pot, boil snails with 4 cups water till the snails are tender. Pour the cooked snail into colander, drain and rinse under cold water. Set aside. In a small bowl, mix the limejuice with sugar, fish sauce and salt. Mix well. Add slices of onion with limejuice. Stir well and set aside. In a large bowl, mix the banana blossom with the snails, herbs and prepared limejuice. Mix well. Top with chopped chili pepper before serving. Serve with ginger dipping sauce.
